kale, beets, and soba noodles with lemon ginger dressing



























I make this dish whenever I feel like I need a serious nutritional boost. Between the vegetables and the dressing, it's packed with vitamins and nutrients and tastes sensational. I recommend it even if you dislike kale or beets, as the lemon ginger dressing really livens up the taste of the vegetables.

The dish consists of beets, kale, carrots, and soba noodles, a Japanese noodle made from buckwheat. Feel free to substitute the soba with spaghetti or any other kind of pasta or grain. If you want to add protein to this dish, tofu works well and looks beautiful, as it picks up the gorgeous pink coloring of the beets. Just chop some up and throw it into the final dish.

Pasta
1 bunch of kale, chopped
2 carrots, peeled and julienned
1 bunch of beets (about 3 or 4)
4 oz soba noodles (or grain of your choice)
sesame seeds (for garnish)

Lemon Ginger Dressing
(AKA "Princess Dressing," in honor of HRH Princess Mirabella)
Juice of 2 lemons
Zest of 2 lemons
4 T olive oil
2 T soy sauce
2 T flax
2 T white miso paste
1 T honey
2 teaspoons sesame oil
2 inches ginger, peeled

Method
Boil the beets for about 35 minutes, or until tender.

In the meantime, prepare the lemon dressing by blending all ingredients for the sauce in a blender.

When the skin around the beets begins to loosen and the beets are easily pierced by a fork, remove the beets and submerge them briefly in cold water. Set them aside for later.

Bring a second medium-sized pot to a boil. Add the soba noodles and cook until almost done (usually between 6 and 8 minutes). Add the carrots to the pot. Boil for about 30 seconds and then add the kale. Continue boiling everything for another 30 seconds and then remove from heat.

Strain the soba, kale and carrots through a colander and set aside.

Peel the beets using your hands. The skin should slide off easily at this point.

Julienne the beets or slice them into cubes.

Combine all ingredients in a large bowl.

Toss with the lemon ginger dressing. Sprinkle with sesame seeds and enjoy!!

I love the sound of that dressing, we eat soba noodles quite a bit but I do need to add more veggies to my dish like you have!

Thanks! The dressing is really tasty, I must say. Sometimes I just eat spoonfuls of it :)
