strawberry salad with goat-cheese toasts























To commemorate the summer, a simple salad from the farmers market made from ephemeral strawberries, fresh goat cheese, and gorgeous salad greens...


Ingredients:

Goat-cheese toasts:
Bread
Goat cheese

Salad:
Salad greens
Strawberries
Avocado (optional)

Dressing:
2 T vinegar
6 T extra virgin olive oil
1 t dijon mustard (or more to taste)
salt and pepper (to taste)

Method:

First make the dressing. Make an emulsion by slowly whisking the oil into the vinegar. If you don't have a whisk, just use a fork. Add the dijon, the salt, and the pepper to taste.

Next make the goat cheese toasts. Simply spread the goat cheese over a piece of bread and broil in the toaster or the oven until the cheese melts.

While the toasts are broiling, combine the greens and strawberries with enough dressing to lightly coat the salad.
